Happy Summerween Everyone!
I don’t know about you but I am ready for summer to be over. It is too hot here in AZ, and no that isn’t anything new but when you’ve spent your entire life here it gets old real fast. Anyway, I am ready for all things fall, cool and Halloween. Getting into the spirit of fall, I make the house smell like fall and these muffins are the perfect way to do that.
So continue to follow along, let’s bake something sweet together!
I’m not going to make you scroll all the way down to get the recipe, however, if you would like step by step instructions, keep scrolling!
Pumpkin Muffins
- 1 Egg
- ¾ Cup Milk
- ½ Cup Vegetable Oil
- 2 Cups All-Purpose Flour
- 1/3 Cup Granulated Sugar, plus more for sprinkling on top
- 3 tsp Baking Powder
- 1 tsp Salt
- ½ Cup Pumpkin Puree
- 2 tsp Pumpkin Pie Spice
- Heat oven to 400 Degrees F. Grease standard muffin tin or place in paper liners. Set aside. Beat together egg, milk, oil and pumpkin puree. Stir in flour, sugar, baking powder, salt and pumpkin pie spice, just until flour is moistened.
- Fill prepared muffin tins ¾ full and sprinkle tops with sugar. Bake for 20 minutes or until golden brown.
- Remove from oven, let cool for 10 minutes. Enjoy!

First gather all of your ingredients and measuring utensils. You can pre-measure if that’s how you like to prepare. Next grab a large mixing bowl. Preheat oven to 400 Degrees F. Spray or line muffin tin with cupcake liners. Set aside.

Add in all of the wet ingredients, mix with a whisk or fork. Then add in the flour just until flour is incorporated.

Fill prepared muffin tins about 3/4 full. Then bake at 400 Degrees F. for about 20 minutes or until golden brown. Remove from muffin tin and let cool.
